Kick off the 3rd Annual Brine, Brew & Barrel Fermentation Festival where flavor takes center stage. Join us in the heart of Ashland at the historic Ashland Springs Hotel. The culinary team of award-winning LARKS restaurant will pair a multi-course menu with select craft beers by de Garde Brewing, showcasing rich flavors. 

Located in Tillamook, on the Oregon Coast, de Garde Brewing is dedicated to unique offerings. Their craft draws on historic traditions and local experimentation resulting in rich flavors. They don’t add laboratory cultured yeast to ferment their beer. They simply cool the wort naturally in a coolship. Amazing yeast & microflora are all around us!

After the wort cools, they transfer everything to oak barrels (some big, some small, some medium). Each beer takes its own time in barrels to finish fermenting. Most of de Garde Brewing beers take anywhere from 6 months to 5+ years in barrels before they are packaged. Every bottle is naturally conditioned and ready to be enjoyed.

Luxardo cherry & Scharffen Berger bittersweet chocolate cremeux, kirsch sponge crumble, pilsner malt ice cream
